Warning, this dessert is a bit addictive, however, know that it is made with healthy ingredients, and that it is a great way to increase your fibre intake. Enjoy this delectable dessert, and to get that boost of energy during daytime snacking and before or after a bout of exercise.
Ingredients
1/2 cup vegetable oil
1 cup tahini (or any nut butter)
1/2 cup maple syrup
1 flax egg (1 Tbsp flax + 2 Tbsp water)
1 tsp vanilla extract
1 1/2 cups gluten free flour
1/4 cup flax meal
1 tsp salt
1 tsp baking powder
3 cups frozen blueberries (or any frozen fruit)
Instructions
Preheat the oven to 190 degrees Celsius.
Line a pan with parchment paper (I use a reusable non-stick silicone sheet).
Combine all the wet ingredients in a medium bowl. Make sure that they are well-mixed, using a whisk.
Combine all the dry ingredients in a separate bowl.
Slowly add the dry mixture to the wet mixture, until you form a dough.
Separate the dough into 2/3 and 1/3 amounts. Press the 2/3 portion into the bottom of the pan.
Place blueberries on top of the dough, gently pressing them in to secure them in place.
Roll the 1/3 portion of dough into a long tube, then cut into circles to place on top of the blueberries.
Bake for 30 minutes until the top layer is golden brown.
Serve with plain (vegan) yogurt.
