Bean Patties
This is a great picnic food item, and you can use these delicious and plant-based patties in wraps, with a burger bun, or with rice and veggies as part of a dinner bowl.
Ingredients:
5-6 small potatoes, washed and boiled
2 cans of pinto or Great Northern White beans, drained and rinsed
4 cups gluten free bread crumbs
1 cup fresh parsely, washed and chopped
2-3 cloves of garlic, minced
2 yellow onions, peeled and grated
1 Tbsp olive oil
Directions:
Preheat oven to 200 degrees Celsius.
Boil potatoes until they are softly cooked.
With the peel on, mash potatoes with a wooden spoon until they are pureed.
Add beans, bread crumbs, parsley, garlic, grated onion, and spices to the potatoes, and kneed as you would dough until a mixture forms.
On an ovenproof sheet, place formed patties and drizzle with olive oil. Bake until golden brown (about 20-30 minutes).
